Apple Puffed Pancakes


This is a delicious breakfast/brunch recipe to feed family and friends. It’s perfect for upcoming Mother’s Day. If need be, it can all be prepped ahead and then assembled and placed in the oven right before eating. It can be served with butter, cinnamon sugar, maple syrup or even whipped cream.

Apple Puffed Pancakes

• 7 eggs
• 1 ½ cup milk
• 1 1/3 cup flour
• ½ cup brown sugar
• 2 tsp vanilla
• ½ tsp cinnamon
• ½ tsp salt
• 21 g (3-4 small) Granny Smith apples
• ½ cup of butter
• Additional cinnamon and brown sugar

Using a blender or whisk, blend eggs, milk, flour, brown sugar, vanilla, ½ tsp cinnamon, ½ tsp salt together thoroughly. Can be refrigerated 1-2 hours. Core, peel and cut apples into thin slices. Sprinkle with cinnamon to coat. You can do this ahead and place in a Ziploc bag in the fridge. Preheat oven to 425 degrees. Place butter in a 9×13 pan and melt in oven. Place apples over melted butter in pan. Return to oven until butter sizzles and apples start to soften but does not brown. Pour batter over apples. Sprinkle with brown sugar. Bake in preheated oven until puffed and brown. Serve hot with butter and maple syrup.
