Broccoli and Rice Casserole

I often have a hard time trying to come up with a side dish for supper and I was happy to find this one. Broccoli is a favourite vegetable in our house and so is rice; therefore this is a great, make ahead casserole for our family.

Broccoli and Rice Casserole

• 1 large bunch broccoli
• 1 large onion, diced
• 1 tbsp butter
• 1 can of cream of chicken, broccoli or mushroom soup
• 1 cup uncooked rice
• 1/3 cup milk
• 1 cup shredded cheddar cheese

Wash and chop broccoli into bite size pieces. Sauté the broccoli and diced onion in the butter until tender but crisp. Do not overcook. Place in the bottom of a greased casserole dish. Mix together soup, cheese, rice and milk. Place mixture over broccoli. Bake covered for 1 ½ hours or until rice is tender. (Check near the end of cooking to be sure you are not overcooking it, or the rice will get crunchy). If you find that there is too much liquid, you can remove the lid during the last 15 minutes of cooking.
