Sheet Pan Chicken Pitas with Tzatziki

A quick, easy and delicious recipe. A perfect meal for a busy weekday, but also an impressive dish to serve to guests. Place everything on a large platter and allow everyone to assemble their own pitas.

Sheet Pan Chicken Pitas with Tzatziki

• 1 lb boneless skinless chicken breasts, cut into thin strips
• 3 cloves garlic, minced
• 1 tbsp olive oil
• 1-2 tbsp lemon juice
• 1 tsp each of cumin, smoked paprika, kosher salt
• ½ tsp curry powder
• Black pepper
• 2-3 bell peppers, sliced into strips
• Tzatziki sauce (homemade or store bought)
• Cucumbers, diced
• Red onion, diced
• Kalamata olives
• Feta cheese
• Pitas or Naan bread

Preheat oven to 425 degrees. In a bowl mix the chicken with garlic, 1 tbsp olive oil, lemon juice, cumin, smoked paprika, salt, curry powder and pepper. Marinate for 30 minutes (don’t marinate for too long or it changes the texture of the chicken). On a sheet pan toss the peppers with olive oil and salt. On a second sheet pan, place the chicken pieces. Cook both for 10-15 minutes or until chicken is cooked and peppers are browned. (If you have a large sheet pan you can put the chicken on one end and the peppers on the other end). Serve chicken and peppers on a platter or on the sheet pan with Tzatziki sauce, pita or naan bread, and all the fixings on the side. Everyone can build their own pitas.
