Healthy Double Chocolate and Peanut Butter Muffins

Thank you to one of our out of town customers/readers for the following recipe. She tells us these muffins are delicious and ALMOST guilt free. Chocolate and peanut butter is my absolute favourite combination and I’m anxious to bake and try these muffins this weekend. I appreciate her for taking the time to bring the recipe in and for sharing it with all of us.

Healthy Double Chocolate and Peanut Butter Muffins

• ¼ cup cocoa powder
• 2 tbsp oat flour or all-purpose flour
• ½ tsp baking soda
• ¼ tsp baking powder
• ½ tsp salt
• 2 tbsp brown sugar, lightly packed
• ½ cup creamy peanut butter
• ¼ cup unsweetened apple sauce
• ¼ cup vanilla Greek yogurt
• 1 tsp vanilla
• 2 tbsp honey
• 1 large egg
• 5 tbsp dark chocolate chips

Preheat oven to 350 degrees. Spray muffin tins (do not use liners). Stir together cocoa, flour, baking soda, salt and brown sugar. In a separate bowl combine peanut butter, apple sauce, greek yogurt, vanilla and honey. Beat until completely combined. Mix together the dry and wet ingredients until just combined and then add the egg, don’t overmix. Stir in the chocolate chips. Pour the batter into the muffin tins and top each muffin with additional chocolate chips. Bake 18- 22 minutes or until a toothpick comes out clean.
