Are you trying to avoid using the oven because you don’t want to heat up the house any more than it already is? Or are you looking for a simple summer dessert? This layered frozen ice cream dessert is a recipe you can make all summer long and I promise you that everyone will love it. It’s easy to make, delicious, and you can make it ahead to have on hand for summer guests, to take to a social gathering or just to enjoy yourself.

Buster Bars

• 1 package (14.3 ounces) Oreo cookies, crushed (dump
cookies into a large plastic zip-lock bag and pound them
until they crumble)
• Container of vanilla ice cream, softened
(approx. 8 cups or 4 Litres)
• 16 ounces hot fudge sauce
• 1 1/2 cups peanuts
• 1 large container of Cool Whip ( 1 Litre)

Line the bottom of 9×13-inch dish with crushed Oreos (I like to use a tall foil cake pan). Spread softened ice cream over Oreos. Place the pan in the freezer and allow time for the ice cream to freeze again (1 to 2 hours). Spread fudge sauce on top of the vanilla ice cream (if it’s too thick, put it in the microwave for just about 10 seconds to soften a bit). Sprinkle peanuts on top of the fudge, and then the Cool Whip over the peanuts. Place it in the freezer again to firm up. Once firm, you can cover it with plastic wrap and keep it in the freezer until ready to serve. To serve, allow it to thaw a bit, cut into squares, and serve with additional hot fudge and peanuts.
