Italian Chicken Casserole


Thank you to our favourite office baker for this quick and easy casserole.

Italian Chicken Casserole

• 4 lbs chicken, breasts or pieces
• ¼ cup of oil
• 1 cup chopped tomatoes, or 1 -16 oz can of diced tomatoes
• ½ cup chopped onion
• ½ cup, chopped green pepper
• 1 clove of garlic, minced
• 2 Bay leaves
• 1 pinch of oregano
• 2 tsps salt
• ½ tsp pepper
• 1 cup, long grained rice
• ¼ cup oil
• Water or chicken broth

Preheat oven to 350 degree. Brown cut up chicken in first amount of oil. Put into a large casserole dish. In the skillet combine remaining ingredients except the rice. Simmer for 5 minutes. Pour over chicken. Brown rice in ¼ cup of oil and add to the casserole dish. Add water or chicken broth to just cover rice. Bake uncovered for 1 hour and 45 minutes.
